Okay lets be honest there is a need for comfort food, tv food, food in a hurry – food when nobody else it at home and you cant be bothered to cook!  So I made this up inspired by a recent trip to California.  I love crunchy and as you may have realised I do love cheese too.  So tha kale as you may have guessed is my attempt at making this a bit more healthy.

 

Ingredients

  • Lightly salted Nachos
  • Grated cheese
  • 1 handful of kale

Optional

  • Chilli
  • Tinned Beans such as flagelot, cannelini or kidney beans.

Method

  • In a large pyrex oven proof dish, layer all the ingredients good to mix the kale and the cheese and the nachos so that as you eat towards the bottom of the dish you still get pockets of chewy or crunchy kale and also gooey or crunchy cheese.
  • Pop it into the oven for about 10 minutes at 180 but do watch it so the nachos don’t over cook essentially you just want them warm and the cheese to have melted and the kale to go crispy.
  • Eat with a large bowl of homemade Gucamole – chunky or smooth that is the question.
